My search for the perfect crab cake recipe has spanned a couple decades, just like my search for the perfect chili recipe (conclusion: just use the !!!error: Indecipherable SUB-paragraph formatting!!! with ground pork or ground sausage (no beans) for the best result. Simple).

Similarly, the solution to the crab cake problem was a previously existing recipe, not something I “cooked up.” Use the !!!error: Indecipherable SUB-paragraph formatting!!! . BUT:

1) add very finely chopped onions and red peppers;

2) substitute !!!error: Indecipherable SUB-paragraph formatting!!! for blackening seasoning, and use about 50 percent more;

3) for thecreole mustard, use Dijon and add 1/4 tsp of rice wine vinegar and 1/2 tsp of Worcestershire sauce and, finally;

4) do NOT just bake them - use the French method for steaks. Use a pan that can go in the oven, get it hot as you can without causing the olive oil to smoke, and pan fry the crab cakes for 3 minutes, flip them, and put them in a 425 degree oven for 7 or 8 minutes or until the interior temp is 150F.

That’s the best crab cake I can make. Your mileage may vary ...

1. Could you at least have s tag ed it on the grill of your MG or the rear bumper of your Camry? This isn’t foody.crabcake.com.

2. I love crab cakes. I visit DC now and then and I always find a way to fit in a crab cake lunch or dinner in the Chesapeake Bay region . Thanks for the recipe.

Some items don’t bear a price tag at Fairway’s fish counter, for some reason. So when I picked up the 8 oz. container of lump crab meat yesterday I thought - what could it cost? $14.99? $16.99?

$23.99. Geeze. 3 crab cakes, 8 bucks a pop. Still cheaper than a restaurant though ...

Grew up in MD and DC, and sailed the Chesapeake every summer. I know from crabs. And try an Old Bay bloody - put some in the drink, crust the rim, serve with a lemon wedge. Will change your life.
